We are excited to be able to offer a range of wines from the exceptionally talented Thierry Pillot of Domaine Paul Pillot. Thierry, later joined by his younger sister Chrystelle, has been running his family domaine since his early 20’s and is now in the upper echelon of producers in the Cote de Beaune.
Thierry and Chrystelle are the fourth generation to farm vineyards in the village of Chassagne-Montrachet after their great-grandfather started the domaine in 1900. Thierry has focused their efforts in the vineyards, painstakingly working with vines, training them higher, and converting to organic practices.
In the cellar, the approach is non-interventionist with long maturations and small amounts of new oak. The wines are barrel fermented with native yeasts before maturing for 18 months – 12 months in oak followed by six months in stainless steel.
The wines from Thierry are always some of our favourites from our en primeur tastings – displaying a stunning depth of fruit backed by vibrant acidity and well-integrated oak. They are lovely wines of purity and intensity and are excellent wines to stock up (we have very limited stocks).
