Soverribas comes from a single parcel of west-facing vines, that are relatively old at 35 years old. It is fermented using natural yeasts, has no additives, aside from some sulphur and the wine is aged in large old oak casks for a year. This is a vibrant wine that is intensely concentrated, with mouth-watering acidity and a long finish.
Alberto Nanclares has become one of the stars of Rias Baixas. He farms organically with some biodynamic practices. Seaweed is used as compost in the vineyards and the vines aren't ploughed to protect the natural habitat. Similarly, he uses minimal intervention in his winemaking, resulting in impressive and age-worthy wines. He is focussed on quality and keeps yields incredibly low.
