This is an incredibly small project from three friends: Carlos Sánchez of Las Bacantes, Javier García of 4 Monos and Nacho Jiménez from La Tintorería, a wine shop in Madrid. The grapes are sourced from a tiny vineyard in Rioja Alta that uses biodynamic farming practices. Fermentation occurs in fibreglass vats with 50% stems and the wine is aged in neutral oak barrels for more than 12 months.
